Is there a way I can vote on a slide whilst only effecting some answers?

If some of the participants would like to change their answer, can we go back at the slide and give the opportunity to the ones to change their answers without effecting others answers?

No, if you run a vote again it will clear all the data and everyone must vote again. To do this you go to the slide where you want to vote again. That slide will be showing the graph from the original vote. Press V on your computer and the results will be cleared and everyone can vote again. There is a manual way for you to change the data for each slide but we don't usually advise that people do this as it would be easy to make a mistake. If it's essential for you, I can show you how to do that.
